Chocolate mousse
Here is my version of a popular vegan dessert. If you like almonds you would enjoy bitter-sweet taste of the mousse. It is also great for all of you who cannot get enough of the chocolate oranges. This chocolate mousse cake is a very good way to surprise your non-vegan friends. I like watching their eyes round when I tell them it is made with tofu.
1 1/2 cup semi-sweet chocolate chips (the vegan kind)
1 pack (12oz) soft tofu
1 Graham cookies crust (check for honey and other non-vegan ingredients)
1 teaspoon almond extract
zest of 1 orange
juice of 1 orange

- In a medium size bowl blend tofu until smooth.
- In a double boiler melt chocolate chips on the medium heat. Stir the chocolate constantly to avoid burning. Also make sure not to get water in the chocolate mass.
- Fold chocolate in tofu. Add almond extract, orange zest and juice. Mix well.
- Layer the choco-tofu mixture into the crust and let cool in the fridge for 45-60 minutes. The more chocolate you use the faster and “harder” will mousse congeal.
- Serve decorated with berries, oranges, and almonds.
